Due to popular demand, join us for butchery class number two: Peach fed pigs, butchery basics and the art of making fresh sausage.
Thanks so much to everyone who signed up for our very first butchery class and for expressing such interest in and enthusiasm for it! Susan and Wolfgang have another beautiful peach-fed pig for us, so we're going to offer the same class the following weekend as well. Eli Cairo and his right-hand man, Josh Graves (formerly of Fleischer's Meats), will go over whole animal butchery with hands-on demonstrations and the basics of fresh sausage making. Attendees will leave with a well-rounded grasp of butchery basics, along with a couple choice cuts of meat and some fresh sausages. Class is limited to twenty attendees.
